Skirt steak from a few days ago . . .sliced thin
1/4 onion sliced thin
1/4 tomato choppped
1/4 bell pepper chopped
1 clove of garlic
Whatever else I can find (today I found some mushrooms but leftover beans and rice would work too)
In a HOT pan with 1tsp of oil add the steak and garlic, and cook until crisp.
Add onions and mushrooms and cook until onions are transparent. Add tomatoes and bell pepper, this will allow the peppers to remain crispy and the tomatoes do not get slimy.
Serve with avocado on a warm flour tortilla sprinkled with lime juice.

tacos are an excellent way to use up leftover meat in the summertime! i try to always have taco ingredients on hand for such purposes. yum yum yum...i bet leftover barbecue/pulled pork would make yummy savory tacos too.
i finally had the well-reviewed from-scratch tacos at la guadalupana last weekend and i loved them. so refreshing and the best tortillas i've had in memphis. yay.
